Panning and zooming should work in Edit mode

Description

Panning i.e. two-finger scrolling, and zooming i.e. two-finger pinch zooming, should work in Edit mode. This used to work when there was a single mode, before iPhoneOS 3.0: see #88.

(In [167]) Added two-finger panning and zooming to Edit mode (fix #100). Fixed second touch during Edit mode randomly switching sketch to other finger (fix #101). Selection and trace layer now updated within a single transaction.
